It's A Brownie Muffin Kind Of Day

Cooler temps today and windy.  I decided to make some high fiber brownie muffins.  This is actually a Weight Watcher recipe I have had for years.

 Brownie Muffins
1 package Betty Crocker low fat brownie mix
3 cups Kelloggs's All Bran
2-1/4 cups water
1-1/2 tsp baking powder

Preheat oven 350 degrees
Pour water over the All Bran and let it soak up for about 5 minutes in a medium size bowl.
In large bowl stir together brownie mix, All Bran mixture and baking powder. Mix well until mixture is moist.
Place paper cupcake liners in muffin pan.
Fill up each of the liners to the very top.
Bake at 350 degrees for 25-28 minutes.

The recipes says it makes 12, but for some reason I always end up with 16.
I don't don't have the nutritional values, but each muffin is 1 WW point. :-)

Not the best pic..but you get the idea.  They actually taste a lot better then they look in the photo! lol

Have a wonderful day!

  7. Wow those look yummy but I would need milk to go with them. Maybe when I retire I will start to do experimental/for fun cooking. :)
